Cheddar Chive Potato Ranch  Biscuits Recipe
Ranch dressing is the secret ingredient. Dough tends to be a bit wetter and softer than reqular biscuits recipes.

Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 1/2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1 cup sharp cheddar, grated
  • 1/4 cup ranch dressing
  • 1 cup mashed potatoes
  • 1 egg, beaten
  • 3/4 cup milk
  • flour for dusting

Directions
  1. Preheat the oven to 425 degrees.
  2. Mix the flour, baking power, salt, and grated cheese together in a large bowl.
  3. Set aside.
  4. In another bowl, combine the ranch dressing, mashed potatoes, egg, and mix together.
  5. use a whisk to combine these ingredients.
  6. Make a well in the dry ingredients and pour in the wet ingredients all at once.
  7. Stir with a spatula only until mixed.
  8. Do not over-mix.
  9. Turn the dough out onto a well floured counter and pat the dough with a floured hands into a 3/4-inch thick slab.
  10. Use a floured biscuit cutter to cut rounds.
  11. With a thin spatula, carefully move the rounds to greased baking sheet.
  12. Bake for ten to twelve minutes or until they start to brown.
  13. Serve hot.

These were so absolutely delicious! I made them to go w/ my broccoli cheddar soup I made for lunch this afternoon.

The combination of flavours was excellent. I could taste a slight hint of potato and they had a very nice, moist and dense consistency. Not crumbly and dry and weird like some other biscuits.

For the last couple minutes of cooking I sprinkled on some extra cheese. It probably didn't need it, but I love cheese and it made a nice cheesy topping. :) YUM YUM.
