Cheesey Western Ranch Corn Muffins

- 1 c all purpose flour shopping list
- 1 c yellow cornmeal shopping list
- 1 packet dry ranch seasoning shopping list
- 1 T baking powder shopping list
- 1 t baking soda shopping list
- 1 1/2 t salt shopping list
- 3 eggs shopping list
- 1 c sour cream shopping list
- 1 stick butter, melted shopping list
- 1 c shoepeg or niblet corn, drained shopping list
- 1 can (4 oz) green chilies, drained shopping list
- 1/2 red bell pepper, cored, seeded and chopped small shopping list
- 1 c shredded moterrey jack cheese ( or your favorite) shopping list
- 1 jalepeno, stemmed, cored, seeded and finely chopped shopping list
How to make it
- Preheat oven to 350
- Lightly grease a 12 cup muffin tin
- In a large bowl combine flour, cornmeal, ranch, baking powder, baking soda, and salt - set aside
- In a medium bowl combine eggs, sourcream, and melted butter
- Stir in corn, chiles, peppers and cheese
- Add wet ingredients to the dry, and stir until just combined - do not overmix
- Fill muffin cups 3/4 full and bake until toothpick stuck in middle comes out clean
