Cheesey Western Ranch Corn Muffins Recipe

Ingredients

1 c all purpose flour

1 c yellow cornmeal

1 packet dry ranch seasoning

1 T baking powder

1 t baking soda

1 1/2 t salt

3 eggs

1 c sour cream

1 stick butter, melted

1 c shoepeg or niblet corn, drained

1 can (4 oz) green chilies, drained

1/2 red bell pepper, cored, seeded and chopped small

1 c shredded moterrey jack cheese ( or your favorite)

1 jalepeno, stemmed, cored, seeded and finely chopped

Directions

Preheat oven to 350

Lightly grease a 12 cup muffin tin

In a large bowl combine flour, cornmeal, ranch, baking powder, baking soda, and salt - set aside

In a medium bowl combine eggs, sourcream, and melted butter

Stir in corn, chiles, peppers and cheese

Add wet ingredients to the dry, and stir until just combined - do not overmix

Fill muffin cups 3/4 full and bake until toothpick stuck in middle comes out clean
