You know the gigantor muffins you see in the coffee shops, I was inspired to just be gluttonous with these muffins. But of course, you can do them in a regular muffin pan and get more out of the batter than 6 large muffins. These are great!

Ingredients
  • The muffins:
  • 4 small-medium bananas - mashed with fork
  • 3/4 cups of sugar
  • 1 egg, beaten
  • 1/3 cup room temperature butter
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • The topping:
  • 1/3 cup brown sugar - packed
  • 2 Tbsp. flour
  • 1/8 tsp. Vietnamese Cinnamon (regular is fine too)
  • Couple runs of fresh nutmeg across the microplane
  • 1 Tbsp. butter

Directions
  1. Preheat your oven to 375
  2. Grease your popover or muffin pan with PAM, butter or oil - lightly
  3. In a mixing bowl, mix the flour, baking soda, baking powder and salt
  4. In another mixing bowl, mash bananas, add softened butter, egg and sugar
  5. Pour wet ingredients into the dry ingredients until just mixed
  6. Pour batter into popover/muffin pan
  7. For the topping
  8. Mix brown sugar, flour, cinnamon and grated nutmeg
  9. Sprinkle over each muffin
  10. Bake for about 20 minutes - check middles with toothpick to test if done. Popover size may take a bit longer.

These are so good. I had some banana's that I had to use or lose them. I made them in normal muffin tins and got a dozen out of the batter. They are so light and not overly sweet. Will be making them again that is for sure!

Simply great. Nice crust. Made them in 10 oz pyrex cake rounds. Used bananas I should have thrown away two days ago. Bananas aren't ripe to me unless the peel is full of brown sugar spots, so I was a little scared to use these really overly ripe bananas. MMmmmmmmm(Homer Simpson) good. I'm not sick yet, although others might argue the point. May I have another please?

Alterations


These are so good the way they are but I'm just wondering how they would taste with ground nuts or rasins.


hmmm. i have tossed finely chopped pecans into the streusel before...that's good. also done a mix on it with blueberry and banana. that's really good too. let me know if you try anything out!
