Popover Banana Muffins

- The muffins: shopping list
- 4 small-medium bananas - mashed with fork shopping list
- 3/4 cups of sugar shopping list
- 1 egg, beaten shopping list
- 1/3 cup room temperature butter shopping list
- 1 1/2 cups flour shopping list
- 1 tsp. baking powder shopping list
- 1 tsp. baking soda shopping list
- 1/2 tsp. salt shopping list
- The topping: shopping list
- 1/3 cup brown sugar - packed shopping list
- 2 Tbsp. flour shopping list
- 1/8 tsp. Vietnamese cinnamon (regular is fine too) shopping list
- Couple runs of fresh nutmeg across the microplane shopping list
- 1 Tbsp. butter shopping list
How to make it
- Preheat your oven to 375
- Grease your popover or muffin pan with PAM, butter or oil - lightly
- In a mixing bowl, mix the flour, baking soda, baking powder and salt
- In another mixing bowl, mash bananas, add softened butter, egg and sugar
- Pour wet ingredients into the dry ingredients until just mixed
- Pour batter into popover/muffin pan
- For the topping
- Mix brown sugar, flour, cinnamon and grated nutmeg
- Sprinkle over each muffin
- Bake for about 20 minutes - check middles with toothpick to test if done. Popover size may take a bit longer.

Simply great. Nice crust. Made them in 10 oz pyrex cake rounds. Used bananas I should have thrown away two days ago. Bananas aren't ripe to me unless the peel is full of brown sugar spots, so I was a little scared to use these really overly ripe bana...more
