How to make it

  • Boil chicken till done and pull off meat in large chunks. Layer chicken in a casserole dish , not quite as long as 13 inches. Mix can of soup and sour cream over low heat, until just warm. I STRONGLY suggest not buying bargain sour cream as it makes the mixture runny, I prefer Breakstones. Spread mixture over chicken. Top with crumbled Ritz crackers. Dot all over with pats of butter. Salt and pepper to taste. Sprinkle with poppy seed. Bake at 350 till brown and bubbly, about 45 minutes.

    I was looking for a quick and easy chicken casserole for supper tonight and decided to give this one a try. Honestly, I was a little skeptical about it with so few ingredients, and I thought it might be bland. I was very wrong. This was so darn tasty! I used cream of mushroom soup, since I didn't have any cream of chicken, and used leg quarters instead of breast meat. I will be adding this to my recipe box for a decadent treat, since it is so very rich, to make once and a while. I served it with mixed veggies and cheddar rye bread. Thanks for the recipe!!
