Russian Meatballs in Pomegranate sauce

- MEAT BALLS; shopping list
- 3/4# ground beef-1/2# ground lamb-1 medium onion-grated-1 egg,slightly beaten-2 TBS. water-1/4 cup dry bread crumbs-1/4 tsp. ground alspice-1/4 tsp.paprila-1 tsp. dried mint-salt and pepper to taste-1/4 cup flour-5 TBS. butter shopping list
- SAUCE; shopping list
- 1/3 cup beef stock-1 1/2 cups pomagranate juice-1/4 cup pomagranate seeds-1/4 cup fresh mint-chopped-salt and pepper to taste shopping list
How to make it
- combine the first 10 items and mix well,cover and refrigerate for 20 minutes.
- shape meat balls the size of walnuts,spread flour on a plate and roll meatball in flour
- melt butter in skillet and cook meatball until well browned on all sides-about 15 minutes
- remove from skillet and set aside
- pour in stock,increase heat to high and scrape skillet bottom and let boil for 5 minutes. season with salt and pepper to taste
- add browned meatballs and seeds,reduce heat to low,cover and simmer for 15 minutes, garnish with mint and serve over cooked rice

This looks very nice! Love pomegranate anything!! Would be nice as small meatballs in a chafing dish on the hors d'oeuvres table!
