How to make it

  • While potatoes are cooking, mash cheese in the bowl and add about a cup of mayonnaise and mix well.
  • Add some olive oil , Dijon mustard, and heated chicken broth and mix until dressing is creamy.
  • Drain potatoes and when warm, peel and slice and add to dressing and mix well until potatoes are covered with dressing and add herbs and onions and mix well.
  • Depending on how many potatoes one uses, add enough mayonnaise etc.
  • Serve warm or well chilled. When chilled, the mixtures blend even better.
