My Boursin Potato Salad

- 3 to 5 pounds yellow potatoes boiled and skinned shopping list
- 1 pkg boursin cheese ( about 5.2 ounces ) shopping list
- mayonnaise to bind shopping list
- Dijon mustard to taste ( 1 to 2 tsp ) shopping list
- olive oil ( 2 Tbs ) shopping list
- 2 Tbs chopped white onion shopping list
- 1 Tbs Fines herbes shopping list
- chicken broth ( 1/4 cup or so ) shopping list
- salt and pepper to taste shopping list

How to make it
- While potatoes are cooking, mash cheese in the bowl and add about a cup of mayonnaise and mix well.
- Add some olive oil , Dijon mustard, and heated chicken broth and mix until dressing is creamy.
- Drain potatoes and when warm, peel and slice and add to dressing and mix well until potatoes are covered with dressing and add herbs and onions and mix well.
- Depending on how many potatoes one uses, add enough mayonnaise etc.
- Serve warm or well chilled. When chilled, the mixtures blend even better.
