I came up with this last night on the fly, and it turned out pretty good. I made it for just the two of us, so the quantities are small - you can double or triple easily to suit your needs.

Ingredients
  • Broccoli florets (I topped off two large spears)
  • 1 cup shredded cheddar or cheddar blend
  • 1/2 cup sour cream (I used light)
  • 1 Tbls dijon mustard
  • 1/4 cup milk (or if you're not worried about the fat, use half 'n' half)
  • Salt and pepper to taste
  • Paprika

Directions
  1. Here's where it is up to you how you want to cook your broccoli to slightly firm:
  2. I was in a hurry, so I covered and microwaved a few minutes just to get it started, you can boil for a few minutes though if you like instead
  3. Arrange broccoli florets in a casserole dish to fit the amount you use
  4. In bowl, mix shredded cheese, sour cream, milk, dijon, and salt and pepper together
  5. Pour/spread over partially-cooked broccoli
  6. Sprinkle with paprika
  7. Bake uncovered at 350* F for approximately 20 minutes or until cheese is bubbly
  8. Enjoy!
