Honey Glazed Salmon

- 2 Tbs minced shallots shopping list
- 1 Tbs chopped fresh thyme or 1 tsp dried thyme shopping list
- 3 Tbs honey shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp ground red pepper shopping list
- 4 6 oz salmon fillets shopping list
- cooking spray shopping list
How to make it
- Prepare grill or broiler
- Combine first 6 ingredients in a small bowl
- Brush honey mixture over skinless side of fish
- Place fish on grill rack or broiler pan (on top of aluminum foil) coated with cooking spray
- Cook about 7 to 10 minutes, or until fish flakes easily when tested with a fork. If honey coating on fish starts to burn black before 7 minutes, your broiler may be too hot. Some of the glaze may drip onto the aluminum foil and burn, no big deal, just watch the fish so it doesn't char and overcook.

This was really delicious. I loved the combination of the thyme and honey. I'm not much for heat, so I just used a bit of chili powder for the ground red pepper. It was a nice addition. My salmon wasn't done in the middle, so I'd recommend a flat...more
