How to make it

  • Prepare grill or broiler
  • Combine first 6 ingredients in a small bowl
  • Brush honey mixture over skinless side of fish
  • Place fish on grill rack or broiler pan (on top of aluminum foil) coated with cooking spray
  • Cook about 7 to 10 minutes, or until fish flakes easily when tested with a fork. If honey coating on fish starts to burn black before 7 minutes, your broiler may be too hot. Some of the glaze may drip onto the aluminum foil and burn, no big deal, just watch the fish so it doesn't char and overcook.

    This was really delicious. I loved the combination of the thyme and honey. I'm not much for heat, so I just used a bit of chili powder for the ground red pepper. It was a nice addition. My salmon wasn't done in the middle, so I'd recommend a flatter or smaller piece of salmon. The brown sugar started to burn so I had to stop cooking. Next time I'll use a smaller piece. Really very good. Added my picture, too.
