A traditional ceviche dipping dish, great for parties or just to eat whenever. Tomato bug pic courtesy of my garden last year. Used a Macro lens. They have claws in the front, 3 pairs and suckers for the back feet. Cool pic.

Ingredients
  • 3 lbs chopped ground fish (Tilapia, catfish, shrimp, it all works)
  • 22 limes
  • 3 Tomatoes
  • 1 Small onion chopped fine
  • Chopped cilantro (depends on how much you like cilantro. at least 4 tbls.)
  • 2 tablespoons salt
  • 1 case Corona

Directions
  1. Squeeze limes in bowl.
  2. Using only a large glass bowl, place fish in bowl and strain lime juice into the fish and mix well. You can find chopped ground fish usually at Mexican markets. Or, have a grocery butcher grind up the fish and shrimp.
  3. Place in refrigerator and mix every two hours for a total marinade time of 6 hours.
  4. Drain excess juice.
  5. Add chopped tomatoes, chopped onion, chopped cilantro, salt, mix and let sit for twenty minutes.
  6. Serve with chips. Best chips are from Trader Joes. The round organic chips are killer.
  7. Serve the Corona right away and continue through out the eating process. I like to put mine in the freezer for about 30 minutes to where there is ice starting to form, severeyly cold, yea!

Thanks for the friend invite. I will try this recipe! I was born in San Rafel Cal. =0)~M

This would be great for my next pool party! Might need 2 cases of Corona with the friends I have,,,teeheehee:)

2 cases minimum, should have 2 more for "just in case. Best JJ

There's 2400 mg of sodium per teaspoon of salt, so that would be 7200 mg per tablespoon and 14400 for 2 tablespoons. The recipe is for 4 so it would be 3600 per serving...a bit much?

The US sodium RDA is 2400 mg,

Fresh catfish ground up for ceviche is not oily. Some dishes call for salt.I only post what I have made, but then I really cook. It is not a bit much salt, it is what the recipe calls for and it is great tasting. The recipe is for 10 people as it is a appetizer.

I like to put scallops in mine, too. Good recipe!

Sutible pic for this recipe, I caught 2, 4 pound catfish using just one of these little buggers!! The lime should remove any oiliness of the catfish. I always trim any off-colored flesh (from along the back and the belly meat) from the fillets anyway, removes excess fat.
