Sweet Bourbon Salmon Recipe

Ingredients
  • • 2 8 oz salmon fillets
  • • 2 tsp chopped chives
  • • 1 cup bourbon
  • • 1/4 cup pineapple juice
  • • 2 Tbls soy sauce
  • • 2 Tbls brown sugar
  • • 1/4 tsp salt
  • • 1/4 tsp black pepper
  • • 1/8 tsp garlic powder
  • • 1/2 olive oil

Directions
  1. 1. Combine pineapple juice, brown sugar, bourbon, soy sauce, pepper
  2. and garlic powder in a bowl. Stir to dissolve sugar.
  3. 2. Add the oil.
  4. 3. Remove any skin on salmon fillets.
  5. 4. Put fillets in baking dish and pour marinade over and let sit in the
  6. fridge for one hour or longer. The longer it can sit the more the
  7. marinade seeps into the fillets.
  8. 5. Now you can put this on the grill or cook it on the stove top on
  9. medium heat. 5-7 minutes per side or until the fillet is cooked to your
  10. desire. Brush the marinade over the filets as they are cooking.
  11. 6. Arrange the fillets on a plate and spinkle with the chopped chives.
  12. 7. Service with a brown rice and salad.

I love this marinade, it suits salmon so very well. I do something quite similar but I hot smoke the salmon, a whole side and it is great. Leftovers make an awesome salad too.

During summer and late fall I do a lot of smoking -salmon of course! and this is one of the brine recipes/ marinating recipes I use, pretty close. The only difference is instead of pineapple juice I use orange juice to break the salmon down.
