A popular dish from the French region of Provence that combines eggplant, tomatoes, onions, bell peppers, zucchini, garlic and herbs — all simmered in olive oil. Ingredients
- 1/4 cup canola oil shopping list
- 2 yellow peppers, halved shopping list
- 1 red pepper, halved shopping list
- 2 Hungarian peppers, halved shopping list
- 1 onion, halved shopping list
- 1 red onion, halved shopping list
- 1 zucchini, halved shopping list
- 1 summer squash, halved shopping list
- 1 eggplant, 1/2-inch slices shopping list
- 10 roma tomatoes, halved shopping list
- 1 shallot, halved shopping list
- 1 bunch oregano, chopped shopping list
- 1 bunch basil, chopped shopping list
- 1/2 bunch parsley, chopped shopping list
- salt and pepper to taste shopping list
How to make it
- Toss vegetables with oil and season with salt and pepper.
- Grill vegetables about 8-10 minutes or until crisp tender, turning occasionally.
- Cut vegetables into a large dice.
- Add herbs and toss .
