I USED TO MAKE THIS WHEN I WAS SOMERSIZING(SUZANNE SOMERS)WEIGHT LOSS PROGRAM. BY THE WAY IT WORKS. I LOST 97 POUNDS IN 12 MONTHS.

  • 8 BONELESS SKINLESS CHICKEN BREASTS
  • 3 EGGS
  • SPLASH OF WATER
  • 2 CONTAINERS OF GRATED PARMESAN CHEESE
  • 26 OZ CAN OF SPAGHETTI SAUCE WITH GARLIC
  • 8 SLICES OF MOZZARELLA CHEESE
  • OIL FOR FRYING
  • SALT AND PEPPER TO TASTE

Directions
  1. PREHEAT OVEN TO 400 DEGREES
  2. IN SHALLOW BOWL PUT EGGS AND SPALSH OF WATER BEAT WITH FORK ADD SALT AND PEPPER TO TASTE
  3. IN A SECOND SHALLOW BOWL PLACE GRATED PARMESAN CHEESE (USED INSTEAD OF BREAD CRUMBS)
  4. DIP CHIKEN BREAST 1 AT A TIME FIRST IN EGGS THEN IN PARMESAN CHEESE-CONTINUE UNTIL ALL ARE COATED
  5. HEAT LARGE SKILLET MED-HIGH HEAT ADD OIL JUST ENOUGH
  6. TO COVER BOTTOM
  7. PLACE CHICKEN IN PAN AND FRY UNTIL BROWNED
  8. TURN AND BROWN OTHER SIDE-ABOUT 3-5 MINUTES PER SIDE
  9. (MAY HAVE TO DO IN 2 BATCHES)
  10. PLACE ALL 8 BROWNED CHICKEN BREASTS IN LARGE ROASTING PAN BAKE IN OVEN FOR 20 MINUTES
  11. IN THE MEAN TIME HEAT SPAGHETTI SAUCE IN SEPERATE
  12. PAN
  13. AFTER 20 MINUTES TAKE CHICKEN OUT AND TOP EACH WITH SLICE OF MOZZAREELA CHEESE PLACE BACK IN OVEN LONG ENOUGH FOR CHEESE TO MELT PROBABLY ABOUT 2 MINUTES
  14. KEEP A CLOSE EYE ON IT
  15. AFTER CHEESE IS MELTED - REMOVE FROM OVEN AND SERVE WITH SPAGHETTI SAUCE ON TOP - YUM YUM - ENJOY
