Slow Cooker TexMex Chicken Recipe
Love my slow cooker in fall and winter. This is packed with flavor. Add jalepenos and or hot sauce, etc. to your liking.

Ingredients
  • 4 large, boneless, skinless chicken breasts
  • 1/2 jar medium salsa, 1/2 jar black bean and corn salsa (I use Newman's Own for both)
  • 1 can reduced sodium cream of chicken soup
  • 1 pkg taco mix
  • 1 can black beans, rinsed and drained
  • 1 can drained OR 1 fresh ear of white corn, cut off cobb
  • 1/2 cup sour cream
  • 1/2 cup shredded mexican cheese blend
  • Garnishes: Salsa, Lettuce, Diced Tomato, Black Olives, Tortilla Chips

Directions
  1. Mix together soup, salsa and taco seasoning
  2. Put chicken in crock pot
  3. Pour soup mixture over chicken
  4. Cook 6 hours
  5. shred chicken with 2 forks
  6. Add beans, sour cream, corn
  7. Cook 1/2 to 1 hour longer.
  8. Layer over corn tortilla chips, add add'l salsa, sour cream, shredded cheese, and other garnishes as desired
