How to make it

  • Add all dry ingredients reserving 2 cups of the flour
  • Add the egg, the oil, the yeast mixture, and the additional water.
  • Mix dough by hand, adding flour gradually until the dough begins to come away from the sides of the bowl.
  • Let the dough rest 10 minutes
  • After the resting period, knead the dough right in the bowl, gently, for 3 to 5 minutes
  • Now place the bowl into a warm place to proof until doubled in bulk.
  • This doesn’t take very long, only about 40 minutes
  • Place a little flour on the working surface
  • Knead the dough, pressing, turning, folding, and repeating until the dough is smooth and blistered.
  • This usually takes about 6 to 10 minutes.

  • Form the rolls:
  • Separate roughly a ‘fistful’ sized piece of dough.
  • Roll between hands and form a cigar shape.
  • Now give it a twist to form a swirl, and place it onto the baking pan.
  • Each roll is made in the same way, forming the pattern you see in the illustrations.
  • Brush with the melted butter, sprinkle with sesame seeds, and proof again in a warm place until doubled in bulk. (see illustration)
  • Bake at 350*F for 20-30 minutes or until golden brown.
  • Cool, then separate the rolls and pile on top of each other and serve on plate!
