My brother celebrated another birthday, and requested a beef dish... so I made my "Elaine's Economical Beef Wellington", stir-fried peppers with celery, onions and asparagus...Caesar Salad on the side... Dessert was my pumpkin pockets.

- The stir fry:
- 1 each yellow and one red sweet bell pepper
- 1/4 green sweet bell pepper
- 1 medium sized white onion
- 12 to 15 pieces asparagus, tips intact
- 1 1/2 cups celery
- 3 tbsp olive oil
- 1 tbsp butter
- ============================
- The Salad --- \homemade Caesar
- ============================

Directions
- Combine in frying pan:
- the butter and olive oil
- the peppers, semi-finely chopped
- the onion, coarsely chopped
- the celery, chopped into small 'sticks'
- Stir-fry until the vegetables are tender and serve alongside the Wellington, with dinner rolls.
