How to make it

  • Heat oven to 375. In a small bowl,combine flour,baking soda, and salt. In a large bowl,beat together shortening,butter and both kinds of sugar. Beat in eggs and vanilla. Dissolve coffee in 4 tsp water. Stir into butter mixture,then stir in flour mixture unti soft dough forms.
  • With wet hands,roll dough into 1" balls. Place on non-stick baking sheets. Bake at 375 for 10 mins,then press 3 mini kisses into top of each. Cool cookies on a rack.

    Sounds great, Pleclare. :) I bet these would be good if a person used chocolate covered espresso beans in place (or in addition) to the chocolate kisses.

    These would make nice cookies for a christmas tin as a gift, I imagine.
