  • Medium: (Makes 1 cup)
  • 2 tablespoons buter or margarine
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup milk

  • Thick: (Makes 1 cup)
  • 3 tablespoons butter or margarine
  • 4 tablespoons all-purpose flour
  • 1/4 cup milk
  • -------------------------------------------------------------------------------------------
  • Thin: (Makes 1 1/2 cups)
  • 1 tablespoon butter or margarine
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups milk

Directions
  1. To prepare White Sauce: Melt butter in saucepan over low heat.
  2. Blend in flour, salt and dash white pepper.
  3. Add milk all at once. Cooking quickly, stirring conatantly, till mixture thickens and bubbles.
  4. Remove sauce from heat when it bubbles.
  5. Add cheeses or other flavorings at this point, stirring till smooth.

  7. Make Medium White Sauce for sauces, scalloped and creamed dishes.
  8. ------------------------------------------------------------------------------------------
  9. Prepare Thin White Sauce for soups and creamed vegetables.

  11. Make Thick White sauce for croquettes and souffles.

  13. If sauce cooks too long, it becomes too thick and butter separates out. To repair, stir in a little more milk. Cook quickly, stirring constantly, till sauce bubbles. A wooden spoon or rubber spatula is handy for preparing sauces. Use a heavy saucepan.

I love this stuff, but don't make it often enough to remember the proportions. Equal amounts of butter and flour ... then I'm lost.
