Cranberry Rice Pilaf Recipe
Juicy cranberries and crunchy pine nuts dress up the rice in this side dish. The suble flavors make it a good side dish for many entrees.

Ingredients
  • 3/4c chopped celery
  • 1/2c chopped onion
  • 2Tbs butter
  • 1Tbs olive oil
  • 1c uncooked long grain rice
  • 21/2c chicken broth
  • 1/2c chopped mushrooms
  • 1/2c dried cranberries
  • 1/2tsp garlic powder
  • 1/2tsp curry powder
  • salt and pepper to taste
  • 2Tbs minced fresh parsley
  • 3Tbs pine nuts,toasted

Directions
  1. In lg. saucepan,saute celery and onion in butter and oil till tender. Add rice;cook and stir for 5 mins or till lightly browned.
  2. Add the broth,mushrooms,cranberries,garlic powder,curry powder,salt and pepper. Bring to a boil. Reduce heat;cover and simmer 2o mins. or till liquid is absorbed and rice is tender.
  3. Remove from heat. Stir in parsley;sprinkle with pine nuts.
