Cheesy Rice With Fresh Spinach And Mushrooms

- 1 1/2 cups water and 3/4 cups rice - salted/cooked accordingly shopping list
- 1 Tbls. butter/1Tbls. olive oil shopping list
- 2 Tbls. chopped green onions (I had three) shopping list
- 1 tsp. minced garlic shopping list
- 1 cup chopped mushrooms (approximately) shopping list
- 1 cup torn fresh spinach (approximately) shopping list
- 1 tsp dried basil (even better with fresh basil, if you have it) shopping list
- 1 cup shredded mozzarella (or any other cheese) shopping list
How to make it
- Cook rice (or leftover rice works great)
- Meanwhile add butter and/or olive oil to pan over med - med/low heat
- Saute onion, garlic
- Add mushrooms and let cook down without stirring (about 5 mins. or so)
- Add spinach and stir till cooked down
- Add basil, salt and pepper to taste
- Add cooked rice and 1/2 cup of cheese to spinach/mushroom mixture and combine
- Put in small casserole and top with remaining cheese
- Bake in 350 oven till bubbly (it's already cooked and hot, so however long you like)
