Ingredients

6 Tblsp olive oil

2 large onions - sliced

1 red bell pepper - seeded & sliced

4 oz fresh mushroms - sliced

16 oz canned tomatoes

Pinch salt & pepper

Pinch dried thyme

1 1/2 cups water or fish stock

2 lb fish fillets - any white firm fleshed fish will work

1/2 cup white wine

2 Tblsp chopped parsley

Directions

Heat the oil in a large deep skillet & add the onions

Cook until just beginning to look transluscent

Add the pepper & cook until the vegetables are softened

Add the mushrooms & the tomatoes & bring mixture to the boil

Add thyme, salt , pepper & water & simmer for about 30 mins

Add the fish & wine & cook until the fish flakes easily, about 15 mins

Stir in the parsley
