Ingredients

How to make it

  • Heat the oil in a large deep skillet & add the onions
  • Cook until just beginning to look transluscent
  • Add the pepper & cook until the vegetables are softened
  • Add the mushrooms & the tomatoes & bring mixture to the boil
  • Add thyme, salt , pepper & water & simmer for about 30 mins
  • Add the fish & wine & cook until the fish flakes easily, about 15 mins
  • Stir in the parsley
