Boatmans Stew

- 6 Tblsp olive oil shopping list
- 2 large onions - sliced shopping list
- 1 red bell pepper - seeded & sliced shopping list
- 4 oz fresh mushroms - sliced shopping list
- 16 oz canned tomatoes shopping list
- Pinch salt & pepper shopping list
- Pinch dried thyme shopping list
- 1 1/2 cups water or fish stock shopping list
- 2 lb fish fillets - any white firm fleshed fish will work shopping list
- 1/2 cup white wine shopping list
- 2 Tblsp chopped parsley shopping list
How to make it
- Heat the oil in a large deep skillet & add the onions
- Cook until just beginning to look transluscent
- Add the pepper & cook until the vegetables are softened
- Add the mushrooms & the tomatoes & bring mixture to the boil
- Add thyme, salt , pepper & water & simmer for about 30 mins
- Add the fish & wine & cook until the fish flakes easily, about 15 mins
- Stir in the parsley
