Mary Elizabeths Potato-Topped Meatloaf

- 1/4 cup brown gravy shopping list
- 1 1/2 pounds lean ground beef (I use the meatloaf mix) shopping list
- 1 cup soft bread crumbs shopping list
- 1/2 cup onion, chopped shopping list
- 1 egg, beaten shopping list
- 12 servings instant mashed potatoes (I always use real mashed potatoes) shopping list
- 1 tablespoon melted butter shopping list
How to make it
- Preheat oven to 350 degrees F.
- Combine brown gravy, meat, bread crumbs, onion and egg in a bowl.
- Mix together thoroughly.
- Shape into a loaf.
- Place on small cookie sheet and on a rack, if desired.
- Bake for 1 hour.
- Remove meatloaf from oven.
- Drain fat from pan.
- Spread mashed potatoes over meatloaf evenly.
- Drizzle potatoes with 1 tablespoon melted butter.
- Bake 20 minutes longer or until potatoes brown.
