Mary Elizabeths Potato-Topped Meatloaf

Ed's reiminiscing about his mother's great meatloaf prompted me to call her in Kentucky to beg for her recipe. She added that this is the meat and potatoes and all I needed to add was a vegetable. It did turn out quite nicely and Ed had his great meatloaf once again.
Ingredients
- 1/4 cup brown gravy shopping list
- 1 1/2 pounds lean ground beef (I use the meatloaf mix) shopping list
- 1 cup soft bread crumbs shopping list
- 1/2 cup onion, chopped shopping list
- 1 egg, beaten shopping list
- 12 servings instant mashed potatoes (I always use real mashed potatoes) shopping list
- 1 tablespoon melted butter shopping list
How to make it
- Preheat oven to 350 degrees F.
- Combine brown gravy, meat, bread crumbs, onion and egg in a bowl.
- Mix together thoroughly.
- Shape into a loaf.
- Place on small cookie sheet and on a rack, if desired.
- Bake for 1 hour.
- Remove meatloaf from oven.
- Drain fat from pan.
- Spread mashed potatoes over meatloaf evenly.
- Drizzle potatoes with 1 tablespoon melted butter.
- Bake 20 minutes longer or until potatoes brown.
