Ingredients
  • 1/4 cup brown gravy
  • 1 1/2 pounds lean ground beef (I use the meatloaf mix)
  • 1 cup soft bread crumbs
  • 1/2 cup onion, chopped
  • 1 egg, beaten
  • 12 servings instant mashed potatoes (I always use real mashed potatoes)
  • 1 tablespoon melted butter

Directions
  1. Preheat oven to 350 degrees F.
  2. Combine brown gravy, meat, bread crumbs, onion and egg in a bowl.
  3. Mix together thoroughly.
  4. Shape into a loaf.
  5. Place on small cookie sheet and on a rack, if desired.
  6. Bake for 1 hour.
  7. Remove meatloaf from oven.
  8. Drain fat from pan.
  9. Spread mashed potatoes over meatloaf evenly.
  10. Drizzle potatoes with 1 tablespoon melted butter.
  11. Bake 20 minutes longer or until potatoes brown.
