Pot Roast With Winter Root Vegetables Recipe
Found this in an old Canadian magazine, and it was easy and so delicous, Great with a loaf of fresh bread

Ingredients
  • Marinade:
  • 3-4 lbs of blade roast or chuck or english cut beef roast
  • 1 cup red wine
  • seasoning: smoke paprika, salt, pepper, thyme, (optional: steak powder seasoning)
  • 2 cloves garlic sliced
  • 1/4 cup olive oil
  • 2-3 onions cut into quarters
  • 4 carrots sliced
  • 5 potatoes into chunks
  • 1-2 sweet potatoes into chunks
  • 1/3 cup flour
  • 1 tsp thyme
  • 1 tsp rosemary
  • salt & pepper
  • 3 tbsp olive oil
  • 2-1/2 cups beef stock
  • 2 tbsp worchestire sauce
  • 1 tbsp brown sugar
  • 1 tbsp mustard
  • 3 bay leaves
  • 1-2 tsp smoked paprika
  • garlic powder
  • 2 small pkgs of portabello mushrooms (sliced)

Directions
  1. Marinade overnight the roast ,
  2. In a dish combine 2 tbsp flour, thyme, rosemary, salt, pepper
  3. paprika, and garlic powder, Roll meat to cover in flour mixture.
  4. In dutch oven, heat 2 tbsp olive oil over medium heat, and brown roast all over, remove and set aside
  5. Saute, onion, potatoes, carrot till brown
  6. Add stock, worchestire sauce, brown sugar, mustard and bay leaves and bring to boil, scrapping brown bits off bottm
  7. Return meat and juices with along with left over marinade
  8. cover and put into a preheated 400 degree oven for 90 mintues then lower heat to 350 and continue cooking for 3 hours,
  9. Half way thru, turn meat
  10. About 40 minutes before taking out of oven, put in sliced portabello mushrooms to cook
  11. Remove from oven and take out vegetables and meat to plate
  12. In bowl, combine remaining flour with 1/4 cup water and whisk into pan and bring to boil
  13. Serve with meat & vegetables
  14. Not that complicated but well worth the time and great for left over sandwiches

Hi, Maureen and I just love a good pot-roast and this one is one of the best, we left the sweet potato out as neither of us like them. A great pot-roast it really hit the spot.
