Halibut With Tomato And Garlic Recipe

Ingredients
  • 1 pound halibut, about 1-inch thick
  • 1/4 cup fresh lemon juice
  • 2 plum tomatoes, chopped
  • 2 vidalia onions, chopped
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon salt
  • 2 cloves garlic, minced
  • Crushed black pepper to taste

Directions
  1. Place halibut in baking dish
  2. Pour lemon juice over top
  3. Cover with tomatoes, onion, garlic
  4. Sprinkle with basil, salt, pepper
  5. Bake at 450 degrees for 10 minutes, or until fish flakes easy with a fork
  6. Makes 4 servings
