Mexican Hominy Casserole Recipe
This casserole is so tasty and creamy it goes well with any Spicy main dish you want to fix it with. Try it with my Fiesta Steak. I grew up feasting on hominy in allot of my Grandmother's cooking.Hope you'll give it a go!

Ingredients
  • 1 medium white onion, chopped
  • 1 clove garlic, minced
  • 1 Tbs cooking oil
  • 1 cup sour cream
  • 3/4 cup shredded cheddar cheese
  • 1/4 cup milk
  • 4 oz can chopped green chiles
  • 1/4 tsp ground cumin
  • 29 oz can Mexican Style Hominy, drained

Directions
  1. Preheat oven to 350°.
  2. In a small skillet, cook onion and garlic in oil until tender.
  3. Remove from heat.
  4. In a medium bowl, combine onion mixture, sour cream, half of the cheese, milk, chiles and cumin.
  5. Add hominy and mix well.
  6. Pour into a greased 2-quart baking dish.
  7. Bake, uncovered, for 30 minutes or until heated through.
  8. Sprinkle remaining cheese on top and put back in hot oven for 1 to 2 minutes.
  9. Remove from oven and serve immediately.

Good post! I love hominey. This soudns great.


I have some dried hominy as it is not sold here. Do you have a guess as to how much dried hominy I should soak and cook to reach 29 ounces of canned?

I'm going to copy off this recipe. I think Hubby will love it, as he was raised on hominy dishes. This actually sounds much better than some of the ones I know he likes!
