Mexican Hominy Casserole Recipe

	Helewes / All my dishes 2 years, 6 months ago This casserole is so tasty and creamy it goes well with any Spicy main dish you want to fix it with. Try it with my Fiesta Steak. I grew up feasting on hominy in allot of my Grandmother's cooking.Hope you'll give it a go! Prep:20m Cook:30m Servings:6	Helewes

Ingredients

1 medium white onion, chopped

1 clove garlic, minced

1 Tbs cooking oil

1 cup sour cream

3/4 cup shredded cheddar cheese

1/4 cup milk

4 oz can chopped green chiles

1/4 tsp ground cumin

29 oz can Mexican Style Hominy, drained

Directions

Preheat oven to 350°.

In a small skillet, cook onion and garlic in oil until tender.

Remove from heat.

In a medium bowl, combine onion mixture, sour cream, half of the cheese, milk, chiles and cumin.

Add hominy and mix well.

Pour into a greased 2-quart baking dish.

Bake, uncovered, for 30 minutes or until heated through.

Sprinkle remaining cheese on top and put back in hot oven for 1 to 2 minutes.

Remove from oven and serve immediately.

I have some dried hominy as it is not sold here. Do you have a guess as to how much dried hominy I should soak and cook to reach 29 ounces of canned?
