Ingredients

1 cup granulated sugar

1/2 cup light Karo syrup

4 tablespoons of water

4 egg whites; beat these VERY STIFF on high speed.

1 teaspoon vanilla extract

Directions

SIMPLE.

Combine sugar, syrup, and water and cook on medium heat, stirring frequently, until the mixture ‘threads like hair’ ~ her words.

Add mixture to egg whites, add vanilla, and beat on medium-high speed until glossy and stiff but spreadable.

Ice cake immediately.

This really will melt in your mouth ~ it’s glossy and makes a gorgeously yummy icing ~ pretty much to die for!

The glossiness of the icing makes an awesome presentation, too!

She always baked my husband a chocolate cake with this icing when she knew we were coming to visit ~ we lived almost four hours from her. I’ve never tried another cake flavor combo; this was just IT. Let me know if you try another one. This is a great cake for the holidays, too. Yumm!
