My friend Pam made this for me a few years back and I hounded her for the recipe. These are delicious hot or cold, and can be served as a snack, brunch or lunch (with salad). They also freeze well, but you won't need to because they will dissapear!

Ingredients
  • 1- 6.5 oz jar of marinated artichoke hearts, drained & finely chopped
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 4 eggs, beaten
  • 1/4 cup fine bread crumbs
  • 1/4 t salt
  • 1/4 t white pepper
  • 1/4 t dried oregano
  • 1 T fresh parsley, minced
  • a few shakes of tabasco or hot sauce
  • 1/2 lb sharp cheddar cheese, grated
  • 1/4 cup parmesan, freshly grated, not the powdered stuff

Directions
  1. Over medium heat, saute onions and garlic until tender, them remove from heat.
  2. In a bowl, combine eggs, bread crumbs, seasonings and cheese.
  3. When cooled a little, add onions and garlic to the egg and cheese mixture and combine.
  4. Gently mix in artichoke hearts.
  5. Pour into a greased 7 x 10 baking pan and bake at 350 F for 30 minutes or until set.
  6. Rest for 5 minutes, then cut into bite sized pieces (or larger for brunch) and serve.
