Artichoke Nibbles

- 1- 6.5 oz jar of marinated artichoke hearts, drained & finely chopped shopping list
- 1 medium onion, finely chopped shopping list
- 2 garlic cloves, minced shopping list
- 4 eggs, beaten shopping list
- 1/4 cup fine bread crumbs shopping list
- 1/4 t salt shopping list
- 1/4 t white pepper shopping list
- 1/4 t dried oregano shopping list
- 1 T fresh parsley, minced shopping list
- a few shakes of tabasco or hot sauce shopping list
- 1/2 lb sharp cheddar cheese, grated shopping list
- 1/4 cup parmesan, freshly grated, not the powdered stuff shopping list
How to make it
- Over medium heat, saute onions and garlic until tender, them remove from heat.
- In a bowl, combine eggs, bread crumbs, seasonings and cheese.
- When cooled a little, add onions and garlic to the egg and cheese mixture and combine.
- Gently mix in artichoke hearts.
- Pour into a greased 7 x 10 baking pan and bake at 350 F for 30 minutes or until set.
- Rest for 5 minutes, then cut into bite sized pieces (or larger for brunch) and serve.
