Duck Sausages

- 6 lb Boneless duck meat and fat shopping list
- 2 tbsp salt shopping list
- 2 tsp five-spice blend shopping list
- half pound pine nuts, or pistachios, toasted shopping list
- Marinated sun-dried tomatoes drained and chopped shopping list
- 1/2 tsp dried thyme shopping list
How to make it
- Cut the meat and fat into cubes small enough to fit into the grinder.
- Chill thoroughly.
- Grind the meat once with the medium die.
- Mix the salt, spices, nuts, and sun-dried tomatoes.
- Add to the ground meat and mix thoroughly by hand.
- Stuff into small hog casings.
- Refrigerate or freeze until you want to use them.
- Makes 6 pounds
