How to make it

  • Peel and wash potatoes then cut them lengthwise into quarters and place in a bowl.
  • Pour lemon juice over them and toss then add salt, pepper, minced garlic, oregano and oil.
  • Mix well and marinate at least 1 hour then preheat oven to 425.
  • Arrange potatoes in one layer in baking pan.
  • Pour marinade over top and sprinkle with paprika.
  • Cover pan and put on lower rack of oven then bake 25 minutes.
  • Uncover and bake 30 minutes or until potatoes are tender and crispy on top then serve hot.
