Cornbread Salad Recipe

this is a family favorite for a dear friend..TQ..her family have this for thanksgiving every year, as a side

Ingredients
- 1 1/2 quart pan's worth of corn bread, cooked
- 2 cups mayonaise
- 2 celery stalks chopped
- 1--15 oz can of black eyed peas, drained and rinsed
- 1/2 red bell pepper seeded and chopped
- 1/2 red onion diced
- 3 large tomatoes---diced
- mixed greens for serving lettice or turnip your choice
Directions
- crumble corn bread in a large bowl and stir in all except the greens
- cover and chill till ready to serve
- then...serve on a bed of greens enjoy

We used to to make this all the time and we used leftover pinto beans, whenever momma cooked a big pot. Oh baby...talking about good eats. There's just something about this mix that hits the spot.
