Spinach Meatballs

- 2 packages of frozen spinach shopping list
- 2 eggs shopping list
- 1/2 yellow onion, diced shopping list
- 1 garlic clove, minced shopping list
- 2 teaspoons crushed red pepper flakes shopping list
- 3/4 cup of parmesan cheese shopping list
- 3/4 cup of bread crumbs shopping list
- salt and pepper to taste shopping list
- olive oil shopping list
How to make it
- Cook the spinach according to package, and drain well.
- Saute the onions and garlic until they become translucent.
- Mix the ingredients together. If the spinach mix seems too wet, add more bread crumbs.
- Form the mixture into golf ball sized balls.
- Put in the freezer for 30 minutes.
- Preheat the oven to 350 degrees f
- After the spinach balls have hardened in the freezer, place them on a cookie sheet and put in the oven.
- Bake for 30 minutes, or until they start to brown.

Hi, I printed this recipe for my private collection. LOVE spinach or kale in recipes, but not by itself. Crazy, but when it's in a dish it not only is pretty, but I really think it adds to it's flavor. Thanks for passing this one on. Happy Cooking!

Your recipe sounds delicious I will try these only make them larger and flatten them down to make a patty to serve on a sesame seed bun with some marinara sauce.
