Ingredients
  • 4 pounds chicken thigh, deboned, skin on
  • ยป Marinade:
  • 3 cups soy sauce
  • 8 ounces sugar (1 cup)
  • 1 cup water
  • 1/2 teaspoon minced ginger
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon black pepper

Directions
  1. If you can't find boneless, skin-on thighs...
  2. Butterfly chicken: After removing the bone, place thigh on cutting board and spread it apart so it lies flat. If necessary, cut through side of the thigh, holding knife parallel to cutting board, slicing almost but not all the way through. Spread the halves apart and flatten.
  3. Combine marinade ingredients and add chicken. Marinate, refrigerated, 4 to 5 hours.
  4. Chicken may be pan-fried, grilled over charcoal or baked at 350 degrees for about 20 minutes. (At L&L, the chicken is cooked on the restaurants' griddles.)
  5. RICE RECIPE:
  6. Most of the rice served in Hawaii is a medium-grain rice, cooked in electric rice cookers. If you own a rice cooker, use 2 cups of well-rinsed rice and add water to about an inch above the rice level. Using your middle finger, stick it on top of the rice and when it hits the first bone in your finger where your finger bends, that's usually enough rice. Mrs. Vivia Lee Of Pacific Heights on Oahu taught me this over 30 years ago. (And it works!) Cook the rice in a rice cooker until the lever pops. Let the rice sit in cooker for 10 minutes or more and serve with salad below and chicken.
  7. Mac and Potato Salad, Hawaii-style
  8. 1 bag of large macaroni noodles cooked until soft, not al dente!
  9. 1 cup of regular mayonnaise (Kraft, Best Foods or Hellman's) No Miracle Whip, please
  10. 1/2 small can of regular tuna, drained or 1 bag dry tuna
  11. 3 celery sticks, chopped well
  12. 1 finely chopped large carrot
  13. 3 hard boiled eggs, chopped
  14. 2 large russet potatoes, cooked and cubed (You can defrost a bag of O'Brien potatoes and add a cup or two)
  15. salt, pepper
  16. You can add a handful of frozen peas that have defrosted in a cup of hot water, without the water of course
  17. Mix all of the ingredients together and chill for 2 hours.
  18. Mix well and chill

That place sounds like one i go to..its a old gas station,turned into a butcher shop/store
mom an pop owner..i have eatten smoked sausage all over the south.but this old buthcher, off the beaten path is the best i have ever tasted

There's actually an L and L here in Colorado in the Denver area. It's gooood.


Warning About Pan Frying This Chicken!
Last night, after posting the recipe, I pan-fried the chicken on one of those long, tray-like non-stick pans that covers two stovetop gas burners. The back burner was too high and I was busy putting together a salad when I should have been paying attention to my cooking chicken. Well, the marinade does have sugar in it and it will carmelize quickly and burn as well, over a high heat. You'll get stuck with uncooked yet slightly burned chicken. So beware of your temperature or flame when pan-frying your chicken. A medium flame should be used so that the chicken can cook through before the marinade carmelizes in the pan. Half of my chicken was perfect and the other half, a bit uh dark. Ack! I a degree from the College Of Hard Knocks! The chicken still tasted great! Annieamie
