Boarding House Baked Chicken Recipe
As I rule, I like spicy food. But when I am in the mood for "comfort food" this is what I turn to! Even good cold the next day.

Ingredients
  • 4 pounds bone-in chicken pieces
  • 1 tablespoon salt, or to taste
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1/3 cup vegetable oil
  • 1/2 cup butter, melted
  • 1 medium sweet onion, grated

Directions
  1. Arrange chicken pieces in greased shallow baking pan.
  2. Sprinkle with salt, pepper and paprika.
  3. Combine oil, melted butter and onion. Pour over chicken.
  4. Cover pan with foil.
  5. Bake on lowest rack of oven at 350 degrees for 20 minutes.
  6. Remove from oven and baste with pan juices.
  7. Place on middle rack of oven. Bake uncovered 30 minutes or until browned and chicken juices run clear.

This sounds easy and good. Chicken sometimes becomes boring, you just spiced it up!!

Tried this tonite but made it into a 1 pot meal by adding cut up red potatoes, frozen baby lima beans and 8 ounces of chicken broth-- it was a BIG hit-- thanks!
