Soft Ginger Snaps Recipe
If you like ginger, this is a good cookie. This comes from my Aunt Maggie's collection that I inherited in 1980.

Ingredients
  • 3/4 cup butter
  • 1 cup granulated sugar
  • 1 egg
  • 1/4 cup molasses
  • 1-1/2 teaspoons ginger
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups all purpose flour

Directions
  1. Cream butter, sugar and egg then add molasses.
  2. Add dry ingredients then add to wet ingredients and stir until soft dough forms.
  3. Refrigerate 2 hours then mold into balls and roll in sugar
  4. Preheat oven to 350 then bake 10 minutes

I just made pumpkin dip to have with ginger snap cookies (I cheated and bought the cookies at the store) but need to make these to eat with the pumpkin dip. YUM!

I just had to let you know that I made these cookies for Christmas and they were a big hit! These are ABSOLUTELY DELICIOUS!!!!! My family and especially my grandkids loved them.... My husband told me to keep them on hand!
