Mexican Stuffed Mushrooms

- 12 large mushrooms shopping list
- 1/3 cup thinly sliced green onions shopping list
- 1 clove garlic minced shopping list
- 3/4 teaspoon cumin shopping list
- 3/4 teaspoon chili powder shopping list
- 8 ounces tomato sauce shopping list
- 4 ounces diced green chilies shopping list
- 1/4 pound pepper jack cheese shredded shopping list
- 2 cups unseasoned stuffing mix shopping list
- 2 teaspoons salad oil shopping list
How to make it
- Twist mushroom stems free then trim off dried ends and finely chop stems.
- In skillet over medium heat combine stems, onions, garlic, cumin, chili powder and water.
- Stir often until vegetables begin to brown then add 2 tablespoons water and scrape bits free.
- Add tomato sauce, chilies and half of the cheese.
- Remove from heat and gently stir in the stuffing mix.
- Rub mushrooms with oil then set cup side up in rectangular pan.
- Mound all the filling onto caps then sprinkle with remaining cheese.
- Bake at 400 until cheese is lightly browed about 20 minutes.
