How to make it

  • Twist mushroom stems free then trim off dried ends and finely chop stems.
  • In skillet over medium heat combine stems, onions, garlic, cumin, chili powder and water.
  • Stir often until vegetables begin to brown then add 2 tablespoons water and scrape bits free.
  • Add tomato sauce, chilies and half of the cheese.
  • Remove from heat and gently stir in the stuffing mix.
  • Rub mushrooms with oil then set cup side up in rectangular pan.
  • Mound all the filling onto caps then sprinkle with remaining cheese.
  • Bake at 400 until cheese is lightly browed about 20 minutes.
