Cheesey Mushroom and Broccoli Casserole

- 3Tbs butter,plus extra for the dish shopping list
- 2Tbs flour shopping list
- 1/2lb shitake or baby bella mushrooms shopping list
- 1/4c onions,chopped shopping list
- 2 cloves garlic,finely chopped shopping list
- 1/2tsp garlic powder shopping list
- 1/2tsp cayenne pepper shopping list
- 11/2c heavy cream shopping list
- 1/2c chicken stock shopping list
- 1(10oz.) box frozen chopped broccoli,thawed and drained shopping list
- 2c shreaded cheddar-monteray blend shopping list
- 3c cooked rice shopping list
- salt and pepper shopping list
How to make it
- Preheat oven to 425
- Butter casserole dish. In a large pot,melt 3Tbs butter and flour over med heat till golden in color to make a quick roux. Roux should resemble the color of peanut butter.
- Add mushrooms,onion,garlic,garlic powder,cayenne pepper,heavy cream and chicken stock. Add broccoli,1c of cheese and rice.
- Season with salt and pepper to taste. Pour into buttered 11/8 qt. oval casserole dish and top with remaining shreaded cheese. Bake until cheese is melted and golden,about 20 mins.
