Naan Recipe
This Indian flat bread is great on its own or with a meal. I serve it with curry, salad or soup.

Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon yeast (Dry)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 4 tablespoons ghee or melted butter
  • 2 tablespoons yoghurt
  • 2/3 cup water
  • 1 tbsp Sesame seeds

Directions
  1. Mix water with the yeast and sugar until the yeast is dissolves.
  2. Sift flour and salt together into a bowl and add the yeast mixture, half of the ghee and the yogurt. Mix to forma soft dough, then knead on a floured surface for about 5 minutes or until dough is smooth and elastic.
  3. Place the dough in a large greased bowl, cover and let stand in a warm place for 1 hour or until the dough doubles in size.
  4. Punch down the dough and knead for 5 minutes. Divide dough into lemon sized balls
  5. Flatten the dough using a rolling pin, or by hand (I prefer the second method, for the very rustic look it provides).
  6. Top with sesame seeds or any other topping of your choice.
  7. Brush grill pan with oil, wipe it with a piece of cloth.
  8. Grill Naan over a medium heat until unevenly browned, brushing with ghee before turning.
  9. Brown unevenly on second side, remove from heat and serve warm.
  10. I add minced garlic to my dough (I've added garlic powder in a pinch) to make garlic naan.

This is great! Been looking for a way to make naan for a while. Ate some at a restaurant in California, overlooking the Pacific Ocean about 5 yrs ago, and it was fantastically loaded with all kinds of little surprises. Maybe fennel, and many things I didn't recognize. Thanks lots!! 5555555 to you!!


I had a chance to watch this bread being made at an Indian Restaurant I was amazed by the method used in the old style gas ovens.

Alterations


I've seen this made by sticking the flattened dough to the inside edge of an old-style gas oven, which looks like a large open pot with a gas-fired flame at the bottom. The heat cooks the naan for about five minutes or so, till it rises. Then it's peeled off. Divinely soft and tender, brushed with ghee. Fit for Brahma, Vishnu, or Siva!
