How to make it

  • Preheat oven to 500. Lightly coat a baking sheet with cooking spray.
  • Mix together pistachios nad bread crumbs in shallow bowl. In a seperate bowl,stir together the dijon,olive oil,honey,salt and pepper till smooth. Dip chicken into dijon mixture to coat,then coat with bread crumbs. Place on prepared baking sheet.
  • Place in preheated oven and turn oven to 375. Bake till the chicken is no longer pink and pistacio coating is golden brown,about 20 mins.

    UPDATE: We had these chicken strips last night for dinner. The only change I made was due to the fact that we had no pistachios and had to use hazelnuts instead. I need to tell you that this is a great recipe no matter what nut you use! Thanks again, clare!
