Pistachio Crusted Chicken Strips Recipe
Everyone will love these chicken strips. The recipe is easy and elegant.

Ingredients
  • 1c pistachios,chopped
  • 1/2c bread crumbs
  • 2Tbs dijon mustard
  • 2Tbs olive oil
  • 2Tbs honey
  • salt and pepper to taste
  • 2 large,skinless,boneless chicken breast halves,cut in 1" strips

Directions
  1. Preheat oven to 500. Lightly coat a baking sheet with cooking spray.
  2. Mix together pistachios nad bread crumbs in shallow bowl. In a seperate bowl,stir together the dijon,olive oil,honey,salt and pepper till smooth. Dip chicken into dijon mixture to coat,then coat with bread crumbs. Place on prepared baking sheet.
  3. Place in preheated oven and turn oven to 375. Bake till the chicken is no longer pink and pistacio coating is golden brown,about 20 mins.

UPDATE: We had these chicken strips last night for dinner. The only change I made was due to the fact that we had no pistachios and had to use hazelnuts instead. I need to tell you that this is a great recipe no matter what nut you use! Thanks again, clare!
