My Moms Kraut Runzas Recipe
My Mother used to make these. My Dad taught her how and she just took off from there. They are the best, they bring back so many memories! All of them great!!

Ingredients
  • FILLING:
  • ~
  • 2 lbs. ground beef
  • 1 chopped onion
  • 1 small chopped cabbage, or 2 to 4 cups depending on your taste
  • 1 teaspoon sea salt
  • 1/2 tsp. pepper
  • Seasoning salt to taste, optional
  • Italian seasoning to taste, optional

  • DOUGH:
  • ~
  • 2 c. warm water
  • 1/2 c. sugar
  • 1 egg
  • 6 1/2 - 7 c. flour
  • 2 pkgs. yeast
  • 1/2 c. Crisco shortening
  • 2 tsp. salt

Directions
  1. Filling:
  2. Brown beef with onion, salt, pepper, and othe seasonings to your taste..
  3. Add cabbage to beef and cook until cabbage is kinda transluscent.
  4. -
  5. Dough:
  6. Dissolve yeast in water, add sugar, shortening, eggs, salt, 1/2 cup flour.
  7. Beat until smooth; add remaining flour.
  8. Roll dough out thin on floured surface.
  9. Cut into squares, approximately 13x7 inches.
  10. Place meat mixture inside, bring 4 corners together.
  11. Turn upside down on baking sheet.
  12. Bake at 350 degrees for 20 minutes.

  14. I found this variation on the net. The recipe was not quite the same. But I thought I could add this for those of you who might want to try it.

  16. Variation: Sprinkle your favorite cheese on meat mixture (can be frozen).

I have made these for years. The family doesn't like the cabbage part so I use cheese instead for them and add saurkraut in mine.

Oh my goodness, now you've brought back memories for me! I'm a MN girl, but my husband chose a travelling job early in our marriage and we moved all over the midwest. When we lived in Fremont, NE, there was a chain called "Runza's" - I had never heard of such a thing. It only took one bite to HOOK me, and I've never had them again since we left NE. NOW I can make my own - how wonderful! Thank you so much for reminding me of these tasty little "pockets" of delicious-ness!


I have a recipe that is similar but it has brown gravy mix added to it. Great post, really great recipe. Thanks

Fixed these tonight! They were great! I did end up with a bunch of extra dough so I fixed them as flat bread. They taste great and were easy to fix. Great recipe, thank you!

I am from Culbertson Nebraska. That whole area was settled by german imigrants. When my mom married my Step-dad, she had no idea how to cook german food. She soon learned and this was one of her favorite to make... I want to get her cherry dumpling recipe that daddy taught her next. These recipes need to be shared and saved for future gens.
