Mary Elizabeth also taught me her way to do hush puppies. My mother-in-law was pretty good sharing her recipes with a Yankee. These are a great side for fried fish or fried chicken... gotta be fried, of course, we ARE talking the South!

Ingredients
  • 2 cups self-rising corn meal
  • 1 cup all-purpose flour
  • 1 cup +- milk
  • 2 large eggs
  • 1 tablespoon oil
  • 1 medium onion, chopped (if desired)

Directions
  1. Combine all ingredients well in a bowl.
  2. Let stand to thicken, maybe 5 minutes.
  3. Heat approximately 1" canola oil in cast iron skillet.
  4. Drop batter into oil by spoonfuls, determining the size by the spoon size.
  5. Add water if more moisture is needed but add very sparingly.
