Ingredients
  • 2 skinless boneless chicken breasts
  • 1/2 cup chopped apple
  • 2 tablespoons cheddar cheese, shredded
  • 1 tablespoon Italian-style dried bread crumbs
  • 1 tablespoon butter
  • 1/4 cup dry white wine
  • 1/4 cup water
  • 1 tablespoon water
  • 1 1/2 teaspoons cornstarch
  • 1 tablespoon fresh parsley, chopped for garnish

Directions
  1. Combine apple, cheese and bread crumbs.
  2. Set aside.
  3. Flatten chicken breasts between sheets of waxed paper to 1/4" thickness.
  4. Divide apple mixture between breasts and roll each breast.
  5. Secure with toothpicks.
  6. Melt butter in a 7" skillet over medium heat.
  7. Brown stuffed breasts.
  8. Add wine and 1/4 cup water.
  9. Cover.
  10. Simmer for 15 to 20 minutes OR until chicken is no longer pink.
  11. Transfer chicken to serving platter.
  12. Combine 1 tablespoon water and cornstarch.
  13. Stir into juices in pan.
  14. Cook and stir until thickened.
  15. Pour gravy over chicken.
  16. Garnish with parsley, if desired.
  17. Serve.
