This eggroll is so easy to make and the family and your guests will love them. They can be served with a dipping sauce but are great without and even the picky eater will love them.

Ingredients
  • 1 Pkg eggroll wrappers
  • 1 can bacon flavored spam (diced)
  • 1/2 cup shaved carrot (use potato peeler)
  • 2 cups shredded or very thin cut white cabbage
  • 1 large green onion sliced very thin, use entire stalk
  • 1 egg beaten
  • Enough oil or shortening to deep fry eggrolls
  • Variation Notes: Add a splash of sake, soy sauce and/or sesame oil to the ingredients for a more authentic and interesting change. Also, toss some white sesame seeds into the meat and cabbage mixture for a different taste. Also, add diced shiitake mushrooms for a delicious variation.

Directions
  1. First remove the spam from the container and dice it up as fine as possible
  2. Next fry the spam on med-low heat to avoid sticking or add a little oil to the pan
  3. After the spam has browned to a crispness, add the carrots and cabbage and onion
  4. Stir all ingredients together
  5. Cover and let simmer until the veges wilt (about 10 minutes on simmer.)
  6. Remove skillet from heat and place contents in a small mixing bowl to cool.
  7. After the mixture has cooled, spoon it into the eggroll wrapper
  8. The wrapper should look like a diamond when it is laid out
  9. Fold over the bottom part of wrapper over the mixture and roll once
  10. Then dab the beaten egg on the top and side triangles of the wrapper to seal the roll
  11. Fold in the sides and continue to roll until you have a nice sausage shaped, tight roll
  12. Heat the oil and deep fry the rolls
  13. Tip: Be sure the ends are securely folded in so that the filling does not spill out while cooking.
  14. I also have ready vegetables and tofu to deep fry (tempura) as well to accompany the eggrolls
  15. Toss a salad with a lite Italian dressing and you have yourself a fun meal. Also, Japanese pickles go well with this dish.
  16. Garnish plate with Swiss chard (or spinach leaves) and a few slices of tomato then sprinkle ingredients on plate with chopped green onions or chives for a lovely presentation.

You certainly have excited my husband! He loves Spam so much, we had to stop at the Spam Museum in Austin, MN when we were driving through the area a couple years ago (a fascinating musuem, actually). Thanks for the interesting post - never would have thought of using the stuff as an eggroll filling!!!


Hi Krumkake! Thanks for your comments, I hope you like them. My hubby is a really picky eater and he loves them. I am always trying new recipes on him and he has only rejected 2 so far. LOL He loved tonight's concoction and I will try to post that recipe soon.
