How to make it

  • Preheat oven to 350 degrees.
  • For crust, in a 1-quart mixing bowl, cut butter in chunks, add brown sugar and flour and mix at low speed, then medium speed, scraping sides of bowl until well mixed and formed into crumbs (about 1 minute).
  • Remove 1/2 cup of mixture and set aside; press remaining crumb mixture into 8-inch square pan.
  • Bake 10 to 12 minutes.
  • For filling, beat cream cheese, sugar, egg and lemon juice at medium speed until fluffy (1 to 2 minutes).
  • Stir in pistachios and chopped dried cranberries.
  • Spread filling over slightly cooled crust and sprinkle with reserved crumb mixture.
  • Continue baking 18 to 20 minutes or until filling is set and top is lightly browned.
  • Cool. Store in refrigerator.
