Ingredients

How to make it

  • *use either a 12oz can of mushrooms with the juice (reduce the broth to 1 cup) or use a variety of mushrooms(shitake, bellas, and crimini). With the fresh mushrooms leave the broth amount at 1-1/2 cups.
  • Rinse chicken
  • Dry and season with salt
  • Heat oil in large skillet or saucepan over med-high heat
  • Brown chicken on both sides about 5-6 minutes each side
  • Remove from the pan
  • Add mushrooms and saute for 3 minutes
  • Add onions, shallots, garlic, pepper, and thyme
  • Cook another 3 minutes
  • Sprinkle flour over onions and mushrooms
  • Add liquids and stir
  • Return the chicken to the pan and cook 20-25 minutes
  • Add parsley and cook another 5 minutes or until sauce is to your desired consistency
  • Serve over mashed potatoes or pasta of your choice

    Thank so much for this recipe. Made it tonight. The family loved it so much (except my son---the mushrooms for him was a no no---he ate a sandwich) But the rest of us really liked it so much. Served it over no yolk egg noodles. With asparagus and biscuits and pineapple pound cake.....yummy!! thanks.
