Balsamic Chicken with Mushroom Cream Sauce

- 4 boneless skinless chicken breasts shopping list
- 2 cloves of garlic minced shopping list
- 1 small onion sliced shopping list
- 1 shallot thinly sliced shopping list
- 1-1/2 c chicken broth* (see note) shopping list
- mushrooms* (see note) shopping list
- 1/8 c. milk shopping list
- 3 tbsp flour or Wondra® shopping list
- 3 tbsp balsamic vinegar (can increase or decrease depening on your taste) shopping list
- 2 tbsp parsley shopping list
- 1 tbsp thyme shopping list
- oil shopping list
- pepper to taste shopping list
How to make it
- *use either a 12oz can of mushrooms with the juice (reduce the broth to 1 cup) or use a variety of mushrooms(shitake, bellas, and crimini). With the fresh mushrooms leave the broth amount at 1-1/2 cups.
- Rinse chicken
- Dry and season with salt
- Heat oil in large skillet or saucepan over med-high heat
- Brown chicken on both sides about 5-6 minutes each side
- Remove from the pan
- Add mushrooms and saute for 3 minutes
- Add onions, shallots, garlic, pepper, and thyme
- Cook another 3 minutes
- Sprinkle flour over onions and mushrooms
- Add liquids and stir
- Return the chicken to the pan and cook 20-25 minutes
- Add parsley and cook another 5 minutes or until sauce is to your desired consistency
- Serve over mashed potatoes or pasta of your choice
