Balsamic Chicken With Mushroom Cream Sauce Recipe
This was my first recipe using balsamic vinegar and we loved it!

Ingredients
  • 4 boneless skinless chicken breasts
  • 2 cloves of garlic minced
  • 1 small onion sliced
  • 1 shallot thinly sliced
  • 1-1/2 c chicken broth* (see note)
  • mushrooms* (see note)
  • 1/8 c. milk
  • 3 tbsp flour or Wondra®
  • 3 tbsp balsamic vinegar (can increase or decrease depening on your taste)
  • 2 tbsp parsley
  • 1 tbsp thyme
  • oil
  • pepper to taste

Directions
  1. *use either a 12oz can of mushrooms with the juice (reduce the broth to 1 cup) or use a variety of mushrooms(shitake, bellas, and crimini). With the fresh mushrooms leave the broth amount at 1-1/2 cups.
  2. Rinse chicken
  3. Dry and season with salt
  4. Heat oil in large skillet or saucepan over med-high heat
  5. Brown chicken on both sides about 5-6 minutes each side
  6. Remove from the pan
  7. Add mushrooms and saute for 3 minutes
  8. Add onions, shallots, garlic, pepper, and thyme
  9. Cook another 3 minutes
  10. Sprinkle flour over onions and mushrooms
  11. Add liquids and stir
  12. Return the chicken to the pan and cook 20-25 minutes
  13. Add parsley and cook another 5 minutes or until sauce is to your desired consistency
  14. Serve over mashed potatoes or pasta of your choice

Thank so much for this recipe. Made it tonight. The family loved it so much (except my son---the mushrooms for him was a no no---he ate a sandwich) But the rest of us really liked it so much. Served it over no yolk egg noodles. With asparagus and biscuits and pineapple pound cake.....yummy!! thanks.
