How to make it

  • Mix and sift dry ingredients
  • Add eggs, milk and melted butter,
  • Stir to mositen but do not over beat
  • Place in a 9 x 13 pan and bake 425 F until tops springs back when lightly pressed with a finger and when toothpick in center comes out clean

    This was good. To make it dairy free I substituted water for the milk and canola oil for the butter.

    I thought so too, but it is heavy with flour, cornmeal, sugar, and also the liquids. I have a recipe that uses 5 tsp baking powder( almost 2 Tbs ) so when I saw 7 tsp, it did not phase me. However, try it with less and adjust it with more b.p if needed! The 7 worked for me but I'd be happier to use less if that works too!
