How to make it

  • Preheat oven to 400
  • cook chorizo on stovetop until almost browned; drain; set aside
  • dice tomatoes, jalapenos and cilantro while chorizo is cooking
  • place cheese in an oven-safe dish, cutting in pieces to fit the bottom of the dish (cheese will melt and cover the bottom once it goes into the oven)
  • place cheese in the oven for approximately 7 minutes or until cheese is almost thoroughly melted
  • remove from oven, top with chorizo and return to oven for another 7 minutes
  • warm tortillas in microwave
  • remove cheese from oven and serve immediately
  • queso fundido is best eaten in a warm tortilla with some tomatoes, jalapenos, a bit of cilantro and a squirt of lime - enjoy!

    I make this, we call it flaming cheese! It is awesome. The lime kicks it off. Try with a layer of quick sauted green peppers in there with the cheese... Layers and Layers of heaven!
    Queso Flameado, Flaming Cheese...that's what it is called.
