Ingredients
  • 2 cups cooked brown rice
  • 3/4 tsp. oregano
  • 1/4 cup reduced fat crumbled feta cheese
  • 1 lb. ground beef
  • 2 medium zuchinni{1 lb.} cut into thin slices
  • 1 cup bottled marinara sauce

Directions
  1. Preheat oven 450 degrees
  2. In a large bowl combined: Rice, oregano, and 2 Tbs. Feta cheese Stir in beef untill combined
  3. Scatter Zuchinni into a 13x9 Baking dish in single layer.
  4. using small ice cream scoop Shape meat mixture into 16-1 1/2 inch Balls.
  5. Place meatballs on top of Zuchinni and drizzle with marinara sauce
  6. Cover with foil Bake 22 minutes or untill meatballs are cooked through
  7. Uncover and top with remaining Feta.
  8. Let set untill melts about 1 minute
  9. Makes 4 servings
  10. Given to me by my son-inlaws mother
