Originates in the Yucatan Peninsula of Mexico, Utilizes achiote paste, which is made from annatto seeds.

Ingredients
- 2 1/2 pounds chicken pieces – cleaned, patted dry
- 1 tablespoon achiote paste
- 4 tablespoons water
- 2 tablespoons vinegar
- 1 tablespoon oregano -- dried
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
Directions
- Preheat oven to 350 degrees. Place chicken in a baking dish. In a blender or food processor, blend remaining ingredients and pour over chicken through a sieve. Bake uncovered 1-1 1/4 hours uncovered. Check for salt & serve

Sure - just wrap them individually in foil. I'm sure the cooking time would be less than in the oven.
