How to make it

  • Heat oven to 350. Line 2 baking sheets with parchment paper.
  • In a large bowl, combine the peanut butter, brown sugar, and granulated sugar.
  • Mix on medium speed until well combined.
  • Beat in the egg until just combined.
  • Set aside.
  • Whisk together the flour and baking soda.
  • With the mixer running on low, add the dry ingredients to peanut butter mixture.
  • Gently mix in the bacon and banana, trying not to mash the bananas.
  • Using slightly wet hands, roll rounded teaspoons of dough into balls, placing them on prepared baking sheets-leaving about an inch in between them.
  • Dip the tines of a fork into water, use it to flatten the cookies until they're about 1 1/2 in. around.
  • Bake on the middle rack for 11 min.
  • Cool cookies on the baking sheets for 2 minutes, then remove to cooling racks.

    Just checked out this recipe... incredible. I thought the Elvis sandwich was just fried pb and banana but I had no idea there was bacon too. Fabulous! Make these and enjoy but make sure you book your angioplasty now. Long Live the King... Long Live the King...
