Elvis Cookies

- 1 cup smooth peanut butter shopping list
- 1/2 cup packed light brown sugar shopping list
- 1/2 cup granulated sugar shopping list
- 1 large egg, lightly beaten shopping list
- 1/4 cup all purpose flour shopping list
- 1 tsp. baking soda shopping list
- 1/2 cup crumbled cooked (very crisp) bacon, about 6 slices shopping list
- 1/2 cup diced firm banana shopping list
How to make it
- Heat oven to 350. Line 2 baking sheets with parchment paper.
- In a large bowl, combine the peanut butter, brown sugar, and granulated sugar.
- Mix on medium speed until well combined.
- Beat in the egg until just combined.
- Set aside.
- Whisk together the flour and baking soda.
- With the mixer running on low, add the dry ingredients to peanut butter mixture.
- Gently mix in the bacon and banana, trying not to mash the bananas.
- Using slightly wet hands, roll rounded teaspoons of dough into balls, placing them on prepared baking sheets-leaving about an inch in between them.
- Dip the tines of a fork into water, use it to flatten the cookies until they're about 1 1/2 in. around.
- Bake on the middle rack for 11 min.
- Cool cookies on the baking sheets for 2 minutes, then remove to cooling racks.

I am giving you a five because ELVIS rocks and as you know we lived in College Station!! Not so sure I would love these cookies. Hope you have a blessed day!

I'll rate this a five just because I went to a Firefighting school there at the College Station Campus & had the best time of my life! Not to mention the bonus points for "The King!" LOL
