Shrimp With Feta Cheese

- 1/3 cup chopped onions shopping list
- 3 tbs olive oil shopping list
- 1 plump clove garlic, minced shopping list
- 2 cups fresh tomatoes, diced or 3 cups canned Italian plum tomaotes cooked down to 2 cups shopping list
- 1/2 cup dry white wine or dry vermouth shopping list
- 1/2 cup chopped parsley, preferably the flat Italian type shopping list
- 1 1/2 lbs peeled uncooked shrimp shopping list
- 1/4 lb feta cheese, crumbled shopping list
- salt and pepper shopping list
- season to taste with your choice of herbs such as dill, oregeno, thyme,etc. shopping list
How to make it
- Cook onions in olive oil until translucent. Add garlic, tomatoes, wine, and parsley. Simmer, adding more wine if sauce gets too thick.
- Add shrimp and crumbled cheese. Cook mixture on top of stove or bake in a preheated 350 degree ovem until shrimp are pink and the cheese has melted. Serve a top a salad, pasta or rice.

Wonderful. I remember Shrimp with Feta as a favorite dish from Swanson's Wine Bar and Bistro in Clearwater, FL. We sold tons of it back in the day. Good stuff. Very yummy.
