Ingredients
  • 1/3 cup chopped onions
  • 3 tbs olive oil
  • 1 plump clove garlic, minced
  • 2 cups fresh tomatoes, diced or 3 cups canned Italian plum tomaotes cooked down to 2 cups
  • 1/2 cup dry white wine or dry vermouth
  • 1/2 cup chopped parsley, preferably the flat Italian type
  • 1 1/2 lbs peeled uncooked shrimp
  • 1/4 lb feta cheese, crumbled
  • Salt and Pepper
  • Season to taste with your choice of herbs such as dill, oregeno, thyme,etc.

Directions
  1. Cook onions in olive oil until translucent. Add garlic, tomatoes, wine, and parsley. Simmer, adding more wine if sauce gets too thick.
  2. Add shrimp and crumbled cheese. Cook mixture on top of stove or bake in a preheated 350 degree ovem until shrimp are pink and the cheese has melted. Serve a top a salad, pasta or rice.

Wonderful. I remember Shrimp with Feta as a favorite dish from Swanson's Wine Bar and Bistro in Clearwater, FL. We sold tons of it back in the day. Good stuff. Very yummy.
