Banana muffins with a crumbly cinnamon sugar topping. These are good to grab on the go in the morning with your coffee.

Ingredients
- MUFFINS
- 1 1/2 cup flour
- 1 tspn. baking soda
- 1 tspn. baking powder
- 1/2 tspn. salt
- 3 large ripe bananas,mashed
- 3/4 cup sugar
- 1 egg lightly beaten
- 1 tspn. vanilla extract
- 1/3 cup butter melted
- nuts (optional)
- TOPPING
- 1/3 cup brown sugar
- 1 tbsn. flour
- 1/8 tspn cinnamon, to taste
- 1 tbsn. cold butter
Directions
- In large bowl mix 1st 4 ingredients.
- Mix bananas, sugar, egg, butter, vanilla.
- Stir into dry mixture just until moistened.
- Fill muffin cups 2/3 full.
- Make topping- mix first 3 ingredients.
- Cut in butter until crumbly.
- Sprinkle over muffins.
- Bake @ 375 for about 20 min.
- Cool in pan for 10 min.
